I'll be enchanting and disenchanting. I made enough to be pretty comfortable in Vanilla with this profession, though there's a little grinding to get the profession levelled I'm not able to nolife my way to 60 anyway and so will probably just about have the resources to level it as I level.
As I am rolling warlock, I will be taking skinning and mining with a disenchant slave alt and just getting the mats to get as much as I can for 60!
Along the way I will network and try and make friends that will be willing to do the dungeon clearing half of getting my epic :)

Well, warlocks and paladins don't get their epic mounts for free either, only cheaper.
As a druid I never felt the urge to get a mount, not even a regular one at level 40.
Maybe it's an RP thing or I'm just modest, but once I get https://classic.wowhead.com/spell=783/travel-form I'm set, especially since I plan to at least go for rank 8 this time - the PvP set's 15% speed bonus combined with https://classic.wowhead.com/spell=13890/enchant-boots-minor-speed will boost Travel Form to 163% travel speed = same as a regular mount + https://classic.wowhead.com/item=11122/carrot-on-a-stick .
So, no - I won't farm gold for mounts, but invest in gear instead.
To me (reasonably) spending gold on gear upgrades is an important fun factor of the Vanilla leveling experience.
Leveling is about the journey, not the destination.
The only occasion I will miss having an epic mount will be battlegrounds as soon as other players will get their's, but I'm not too worried - at some point I will have enough spare gold anyways to buy one if I feel like it.

What's the deal with stacking speed bonuses for mounts? There are so many things like https://classic.wowhead.com/item=7969 and https://classic.wowhead.com/item=11226 on top of these. Do they all stack?

Yes, some people carry a 'riding set' to switch into when mounted. When you get run down on your epic mount by the opposite faction... that sucks.
I'll do a good combination of methods to get it.
I plan to level each character I play with gathering professions, and keep everything I don't use until after I hit 60 and then AH.
Then I will convert my lvl 60s to a tradeskill, and farm mats for Leather/Mail armor, and sell what I don't need.
Then I will farm some good secret spots I used to farm for rare drops.
Then start AH flipping when that is all done.
I have well over 10M gold on live, and plan to be 10k+ on Classic.
The secret is, AH everything. Greens/blues/mats/etc.
To reduce downtime, create a bank alt and just keep mailing your bank stuff and keep it in front of the AH.
Also, I plan to no life my first 60, which I am sure getting some rare mats early, will sell for a ton. I imagine I could sell the servers first devilsaur pieces for 200g if I do it first.
I will probably just farm some plants that I will put in the AH. I'm not into farming the same dungeon over & over, I'd rather just chill with the music of the game and collect flowers :).
That being said, I intend to level as fast as possible :D
Mailbox dancing. But actually it'll depend on what the economy is like. I like trying to flip resources and equipment sometimes, or at least farm whatever is popular and not often farmed.

Its still work, but its very time efficient.
The only issue with AH moneymongering is, that you need some money to start it.
Do you guys realize you probably won't be able to farm DM lashers? This is not a private server with the option to just camp outta the instance via command. Or am I wrong?
I don't know if camp will work in Classic but one thing that should work is removing all gear with durability and then die and then ghost run to the entrance. The GY is not far away.

This is so hard not to do at times...
I've found it's way easier if I'm a caster, because what does an extra 2 int and 2 stam give me? There's hardly any +damage gear while leveling. But if I'm a melee class, then I tend to dabble it in a lot more. Even though usually the only items you should buy while leveling are weapons, and that's only at a moment where you can't be grinding a dungeon or something that drops something just as good.
Grinding swamp jaguars from 36-40 in the Swamp of Sorrows, their drops vendor for a decent amount. Enough to get a mount from farming out those levels there.
