Just a quick community poll to see what everyone will be doing come classic for professions. I have opted to leave out skinning/mining/leatherworking unless you are opting to do dual gathering.
Interested to see what the spread will be. Personally I'm looking at Alchemy as it's not something I've really ever pursued.
My main is going to have mining and engineering, just like it was back when I used to play. Having the https://classic.wowhead.com/item=18587/goblin-jumper-cables-xl and the https://classic.wowhead.com/item=18232/field-repair-bot-74a was so nice during dungeons and raids to minimize downtime. Also, I never did get the https://classic.wowhead.com/item=11828/schematic-pet-bombling , but I wanted it soooo badly lol.
I had considered dual-gathering but there are a lot of benefits to having alchemy for PvE and PvP

I don't think the OCE servers will - not as much competition and don't think people are quite that hardcore to do something like this.
Tailoring, for the Truthfaith Vestments primarily. Once I've crafted the gear needed, I'll switch to Alchemy as I'm also levelling Herbalism. Engineering perhaps later.

Yeh fair point, I don't honestly think there will be, but there is always that possibility.
I still have no clue man. What would you guys suggest for hunter? I was thinking engineering cause it fits my class somewhat, but I want to make money as well. What do you guys recommend?

Skinning would be good for the speed and accessibility; however, I think the market will be flooded with cheap leather especially early on.
Mining and Engineering is probably a better shout overall, as the latter is pretty much mandatory for PvP and high tier raiding, or so I have been told.
I will do the boring herb/skinning for leveling to get money and may pick up alchemy later at 60 for money/raids/guildies. Also it's just fun watching your orc shaman, master of the elements, picking some flowers in his BIS sissy dress.
Engineering for PvP and all the other cool little gadgets.
For leveling: skinning and herbalism (after I get my wands)
At lvl 60: Tailoring and ? (probably keep herbalism).
I'll go for herb/alchemy on my druid (or if I go warlock I'll go for tailoring/enchanting (?)).
But I don't know if I'm gonna level with these professions or if I start with skinning/mining to gain some money on the way to 60.. thoughts?

Skinning and mining to vendor or AH is okay for gold whilst levelling, sure. Alchemy late game will help bring in some low but steady income from consumables. That said, Alchemy is also nice for levelling because you can make a lot of stuff to use like swiftness potions, health potions, invis potions etc. which are always in demand and useful no matter what level/gear you are. Not to mention elixirs.
