Last year when Classic launched, I speedruned with my warrior to 60 in a few days /playtime.
Now after a long break I'm back and I'm planning to level up a Paladin this time, the problem is that I used Vanilla-Questing for leveling, but now the page is gone, it was an step by step very detailed site.
Any idea which other options I have left to "speedrun" my way to 60?

If you're talking about the Vanilla-questing.me or whatever, it was open source so I made a backup and put it on Warcraft Tavern. It may be behind by a certain number of updates but I think it's probably usable.

I know Joana gets a big stink about charging for his but it really his a decent guide. My wife and I both use it.

This is the best one around. I've been through a lot of levelling guides on private servers and Classic now (Joana's old one, Jame's, Zygors and this one). This one is the best there is because it overlevels you slightly for most zones, which is great for melee attacks. Joana's guide is aids for Warriors for example because sometimes the mobs are just 2-3 levels higher and very hard to kill solo. Another very cool thing is that it seamlessly integrates your class quests with the levelling path. Completely free. I've done multiple sub 5 days /played runs with this guide (Warrior, Mage and Warlock).
So I've not read this above ^ leveling guide, but it's co-authored by Egregious, who has been a longtime member of the vanilla WoW private server community. I played with them on an old private server almost a decade ago. Egregious wrote what has been for a long time THE definitive resto shaman guide, and people today who make resto shaman guides on Youtube or elsewhere inevitably have taken from the original somewhere up the grapevine.
So yeah. Just giving kudos.
