If you click on mounts (the items themselves that summon a mount), they will have the race restrictions listed right on the item. If there is no specific race restrictions you can use it. As far as I know, none of the boss drop mounts have restrictions.
Example:
https://classic.wowhead.com/item=19902/swift-zulian-tiger (no race restrictions)
VS
https://classic.wowhead.com/item=8595/blue-mechanostrider (restricted to dwarves and gnomes)
The Zulian tiger has no race restrictions, the mechanostrider lists that it can ONLY be ridden by gnomes or dwarves. People are often confused by this when it comes to reputations. Even if you gain the reputation to ride a mount you will not be able to avoid those restrictions. However, the boss drop mounts should not have any restrictions.
Now for my unhelpful opinion, Taurens look awful on tigers and should never be allowed to have one :lol:

I wish Blizzard would put in the Plains Running ability that they once thought about. They're big enough, why get a mount when Tauren can be their own mount.

You would especially think they would have added that back during cata when they added worgen who DO have that ability.

Tauren Druids can already be their own mount. Giving them the Worgen Running Wild ability would just be redundant... like it is on Worgen druids.

Yeah, the original plains running ability had some issues, but blizz sorted them with the form they gave to the worgen. Tauren should have gotten the same ability. I wanna see Tauren running on all four legs.
One of the great raiding accomplishments, the Zulian Tiger! I'm glad that Tauren can use them because I'll be rolling on it with my tank tauren if I ever see one drop! Best of luck to all those who aim to get it :)
